Roast Butternut Squash Tacos With Caramelized Onion-A Mexican Twist

I’m so happy I found this recipe. I grew an absolute abundance of butternut pumpkin this season and I love Taco’s so this is a no brainer to try. I know this is going to be a hit with the whole family. A vegetarian Taco with a twist, with roasted winter squash, caramelized onions which are fragrant with chilies and cumin. Add a smoky red pepper salsa and you have a winning combination.

Ingredients:

FOR THE SQUASH

1 medium butternut squash, seeded, peeled and diced into 1 inch cubes

1/2 medium white onion thinly sliced into half moons

1/4 cup vegetable oil

sea salt and freshly ground black pepper

1 teaspoon ground cumin

1 teaspoon Spanish smoked paprika

1 teaspoon ancho chilli powder

2 tablespoons brown sugar

FOR SERVING

Corn tortillas, preferably homemade

2 cups shredded menonita, Oaxaca or Monterrey jack cheese

smokey red pepper salsa

avocado slices

bottled hot sauce

Diced white onion mixed with chopped cilantro (optional)

Directions:

To prepare the squash, preheat the oven to 190 degrees Celsius. In a bowl. Mix the cubed squash, onion, oil, 2 tsp salt, 1 tsp black pepper, the cumin, paprika, ancho chilli, and brown sugar until well coated. Spread in a single layer on a rimmed baking sheet and roast until soft and well caramelised (25-30 mins).

Heat a heavy griddle and lightly grease the surface. Cook the tortillas, topped with a pinch of the cheese, until the cheese is melted and the tortilla is slightly crisp. Top each with about 1/4 cup of roasted squash, a spoonful of the salsa, and a slice of avocado. Serve with the bottled hot sauce and onion mixture (if using).

Conclusion:

Oh My Gosh what a delicious dinner with a spicy kick. You will fall in love with this taco with a twist and never look at another plain taco the same again. If you are not a fan of a lot of spice you can leave out the hot sauce and chilli or use a mild chilli to still get the lovely chilli flavours without the fire.
