Up until recently I hadn’t even tried Laksa. I’m a pretty conservative person when it comes to ordering out so I tend to stay away from things I haven’t tried and go for the good old trusty favourite. This weird thing happened though, I got sick, just a bad cold, but for days all I had been craving was Laksa even though I had never even tried it I could taste the spicy coconut goodness and I knew I needed to eat it. I ignored it for the first few days but eventually my taste buds won out and I sent my beautiful partner down to our local Asian Central to get me a bowl of their Laksa and that was it!!! my addiction for Laksa has begun……
So now to recreate this bowl of heaven at home……
Ok so I cheated, I went and got a jar of laksa paste, I know I know I should be making this stuff from scratch but this I my first time so i’m taking the easy way. I did however add more than just the paste, from all my research I did almost everyone noted that the paste alone wasn’t enough and for a true authentic flavour so you need to add fresh ginger and garlic and boy were they right.
Anyway I know you’re keen to get your hands on this recipe so here goes…..
Creamy Laksa Soup recipe
1 (185g) jar Malaysian laksa soup paste
1 tin coconut milk
1 1/2 cups water or vegetable stock
250g fried soybean curd or tofu, sliced
250g cooked and peeled prawns (can be substituted with chicken pieces or fish)
200g rice noodles
100g bean sprouts
2 medium capsicums
2 medium carrots
1 medium zucchini
2 Tsp grated fresh ginger
2 Tsp fresh minced garlic
fresh coriander for garnish
Combine Laksa paste, coconut milk, Ginger, garlic, water or vegetable stock in a large saucepan over a medium heat. Cover and bring to the boil.
Add carrots, zucchini and capsicum let simmer for 5 minutes.
Add soybean curd or tofu and prawns and reduce heat.
Prepare noodles according to the packet instructions. Drain and divide into bowls
Ladle the soup over the noodles, top with bean sprouts and coriander
So there you have it, a simple but super tasty Laksa soup that will have you coming back for more. Make this at your next dinner party and you will be sure to impress.
